As Morpheus told us in the matrixThe Matrix, as soon as you die in the matrixMatrix you die in real life. 

But afteronce your mind is only a huge load of bits and bytes (otherwise it would be impossible to be transported via wires), why don't they simply make a backup of their minds as soon as they enter the matrixMatrix, and if something dangerous happens to them (like death), the backup will be reimported. Thus their last memories (everything which happened after the last backup) will be lost, but they can not be killed in the matrixMatrix.
