What species was she?
This piece of information is deliberately left out of currently available materials. We don't know and we won't know in near future.
In the movie, you don’t learn these things [her species and homeworld - insertion mine], but I know that these are things that are coming out in other venues.

Both look possible to me... Though it is true that the sources for the Kumumgah are all now categorized as "Legends" and the Dressellian canon data is far from complete. I don't see any reason why Disney would not reinstate or expand species developed in the legends, just under their own terms. For example The Legends data says that Dressellians where quite tall but this is not necessarily true for the canon. Many species also shrink with age so that could also be a factor. Maz species not being mentioned is not actually that unusual as the canon materials quite often avoid confronting that question directly on first meeting a character.
Possibly Kumumgah? They could be the ancestors of both the sand people and the Jawas, which would explain both her pirate and hoarding sides.
