In 'The Wicker Man', why do they sacrifice humans, specifically?

It's been a while since I've seen it, so I'm sorry if this is very common knowledge, but I can't really remember. Something about the fruit trees growing further north than they should, perhaps? But do they ever name which god/goddess they're specifically sacrificing to, or any more specific reasons for doing so? Thanks.
